How To Make St. Patty's Day Pupcakes

Any excuse to celebrate is a good a reason to celebrate. Luckily for my pup Hudson, our Golden Brittany mix, his birthday falls on St. Patrick’s Day, which means extra special treats! As a (dog) mom, I want to give my dogs healthy treats that are safe, gluten free, and all natural. And let’s be honest, I want to try the birthday cake, too!

When baking for my dogs, I choose ingredients that are good for their overall health, not just tasty for the 30 seconds it takes for them to gobble it down. For the base of this pupcake, I chose coconut flour and applesauce. There’s a natural sweetness in addition to being healthy.

St Patty's Day Pupcakes - Dog Safe Cupcakes for St. Patrick's Day

What makes these cupcakes St. Patty’s themed is the green frosting. As an alternative to food coloring, spinach can be used an all-natural dye. Trust me, it doesn’t taste like spinach, and it’s a great way to add vitamins into your dog’s treats. To make the “Green” Frosting, boil 1 cup of spinach in 1 cup of water for 5 minutes. Once the spinach is soft, drain the water and let the spinach cool. I recommend you start this process before starting the cupcakes, so you have time to let it cool. Then, combine the spinach, the Greek yogurt and banana in the blender, and blend until smooth. Greek yogurt is a great base for the frosting because it provides important probiotics and is low in lactose. If your pup doesn’t do well with diary, skip the yogurt.

St. Patty's Day - Gluten Free Pupcakes Ingredients

St. Patty's Day Pupcake Frosting

Ingredients

  • ½ cup  Coconut flour
  • 1/8 t  Sea salt (optional)
  • ½ t  Baking soda
  • 2  eggs
  • 2/3 cup  Applesauce (unsweetened)
  • ¼ cup  Melted coconut oil
  • ¼ cup  Coconut milk (canned)
  • “Green” Frosting
  • 1 cup  Spinach
  • 2 T  Greek yogurt (plain)
  • ½  Banana

Directions

Pupcake Portion

  • Preheat the oven to 350 and line a cupcake pan with 6 cupcake liners.
  • Combine the coconut flour, sea salt and baking soda.
  • Add the above dry ingredients to a blender or food processor and blend in the eggs, applesauce, melted coconut oil and coconut milk.
  • Once smooth, evenly fill the 6 cupcake liners.
  • Bake for 20 minutes or until a toothpick comes out clean.
  • Let cool before frosting.

Green Pupcake Frosting

  • Boil 1 cup of spinach in 1 cup of water.
  • Drain the water, and let the spinach cool.
  • Combine spinach, Greek yogurt and banana in the blender until smooth.
  • Once the pupcakes are cool, spread frosting on top.
